Cookie Dough Protein Bites (Gluten free, soy free, refined sugar free, and raw)

Recently, I’ve been trying to make healthy swaps for recipes to create a more sustainable healthy lifestyle.

All my recipes are gluten free, of course, since I have Celiac disease. But this one checks off a few more boxes. Yes, it is egg-free ALSO…. soy free, gluten free, raw, and refined sugar free! So if you are trying to get a little protein/fat in your diet these are for you! The one caviat is that I used a specific protein powder so if you a) don’t use protein powder or b) use a different protein powder I have no idea how this will taste or turn out. But… feel free to let me know if you have any success or failures either way :).

Who doesn’t like cookie dough? I can’t imagine. After abstaining from things like cookie dough and sushi over the course of three pregnancies, when it was important to stay away from foods that were possibly hazardous, I am so glad I can provide any expectant mothers with a substitute if need be!

These are pretty amazing!

Ingredients needed:

1C. unsweetened natural vanilla spirutein protein powder

2T coconut oil

1 T grapeseed oil

2T peanut butter

1/4 C. maple syrup

1 t vanilla

1/4 t sea salt

1/2 C. almond flour

1/2 C Enjoy Life chocolate chips

Cookie Dough Protein Bites

Process: Mix dry ingredients together in a large bowl then add wet ingredients.

The balls should stick well together and not be crumbly.

Stir well and form into balls about 1 tablespoon in size.

If you don’t have parchment paper, they still come out okay!

Line a tray with parchment paper and place dough balls on the tray in the freezer for 5-10 minutes.

Remove and enjoy!
