November, pepitas, and pumpkin goodies


Welcome November!
This morning I stowed away some Halloween décor, cleaned the pumpkins out and started baking after rescuing the kitchen from clutter. My son and husband enjoy eating roasted pumpkin seeds (pepitas) so I roasted some with salt and pepper and then roasted the pumpkins we had. My plan is to get some good pumpkin puree going for a batch of muffins, pumpkin soup and pie!
My kids, who are the ultimate of picky eaters, enjoy pumpkin muffins so much! I think I’ve been baking with pumpkin every fall for as long as I can remember and we do the pumpkin patch walks, pumpkin painting, and anything family friendly we can get to for the Autumn Season.
I used Pioneer Woman’s recipe for pumpkin butter when I had company last weekend and it went over really well. I recommend it, if you like a nice toastie with fall flavor.

I had a few too many of those fun size bars yesterday, during Halloween.

She had posted this recipe for pumpkin soup and I think I will be making a batch with some of my roasted pumpkin and do a clean-up of some of my usual baking recipes with healthy substitutions.
