Gluten free Peanut butter muesli cookies

Greetings! I hope you are enjoying this beautiful season!  It’s summer here and I’ve not done a great deal of baking, favoring easy meals with hard boiled eggs, cut veggies and fruit, and grilled chicken and fish.

Today, however, I thought would be a fun morning to bake with my little ones, measuring, pouring, and mixing being a favorite past-time.   Recently I picked up Bob’s Red Mill Muesli cereal which is gluten free.  So I added it in and a new recipe was born!imageIngredients:

1 stick butter, 1/2 cup sugar, 1/2 cup brown sugar, 1 egg, 1 tsp vanilla extract, 188grams Bob’s Red Mill gluten free flour 1:1 replacer, 1 1/2 tsp xanthan gum, 1/2 tsp baking soda, 1/2 tsp baking powder, 1/4 cup peanut butter, ~30 grams muesli, 1/2 cup chocolate chips

 

Process:

Cream wet ingredients, in a separate bowl whisk dry ingredients, then combine and drop into baking sheet by the spoonful.

These bake easily at 350•F for 8-10 minutes and the result was as delicious as the process was fun!!image
