I was so lucky this Christmas to receive a few great cookbooks! Now that I seem to be doing better after three months on an autoimmune paleo diet, I have begun to slowly try adding foods to my diet. I am trying out recipes from:
1. Elana Amsterdam’s almond flour cookbook
2. Danielle Walker from Against the Grain’s Delectable Paleo recipe book
3.Michael Mccamley’s Gluten Free baking cookbook
I am so glad to finally be able to prepare foods that I was proficient at making in my pre-Celiac diagnosis days!
Here is a new favorite modified from Elana’s Pantry’s
chocolate chip cookies:
•2 1/2 C. Almond flour
•1/2 t. Sea salt
•1/2 t. Baking soda
• 1/2 C. Coconut oil
•1/2 C. Maple syrup
• 1 T. Vanilla
• 1/2 C. Chocolate chunks (like enjoy life brand)
Mix and place on baking dish with coconut oil in flattened rounded tablespoons. Bake at 350° F for 10-12 minutes. Let cool and enjoy!
