I hope you’re having a great Labor Day Weekend!
Although the weather has been wet and stormy this weekend, mine is going well! I woke up early Saturday and after fueling with banana pancakes, I headed out for an 8 mile run on a local rail trail. I like running my long runs on rail trails because, literally, where we live it seems everywhere else is a hill run! I don’t have to try to do hills, I have to seek out flat runs! Anyway, I was really pleased with my run and paced myself well.

I didn’t rest after my run because I had to bring my little one to swim class. I love seeing him so excited trying to reach for colorful balls
and then feeling glad when he doesn’t want to leave the pool!
We made sure to grab a snack after the lessons. Justin’s almond butter is SO good. Perfect portion size, too!
We came home and I made an easy tomato-cucumber-chicken salad.
Tomato-Cucumber Chicken Salad
- 1 chopped vine ripened tomato
- sliced cucumber
- shredded chicken
- 1 T olive oil
I was not sore, thanks to foam rolling! I got up early and breakfast was super simple!
I was off to the gym for a strength training workout before church by 7:30. My muscles felt great!
Lunch was a simple protein salad…
and dinner was surf & turf!
