Simple pleasures

 

 

Tonight I was up for hosting book club.  We read another member’s selection: Joe Hill’s NOS4A2 and were meeting for a discussion of the book.  If you haven’t read it, I won’t spoil the story…suffice it to say that if you pick it up you probably won’t be able to put it down until it’s done.  I have to say that I was shocked by some of materian/language, but being that the author is Stephen King’s son… it’s right up that eerie alley.  In all, it was a good “scary” fiction book.

So, I served unsweetened iced tea and homemade gluten free chocolate chip cookies.  These are a work in progress.   Not perfect yet…

Gluten Free Chocolate Chip Cookies

What You Need:

  • 1 1/2 C. rice flour
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1 C. Sugar/sugar replacement (I used Coconut Secret’s Crystals)
  • 1/4 C. Coconut Oil
  • 2 eggs
  • 1/2 t. vanilla extract
  • 1 C. chocolate chips
  • Bake at 350F for 10-12  minutes

Now to order the next two book club books!!
