Today started off beautifully! I grabbed a cup of coffee and headed to the gym early for a strength training routine. I hit the stairmaster for a warm up and then went through a circuit of Cybex machines for about a half hour. It was the perfect way to get my morning started right!
When I got home, I was hungry for breakfast. I had leftovers from last night’s dinner (picture taken last night)…sweet potatoes and beef tenderloin. Yum!
I had got a chance to have a great conversation with a friend while my little guy was napping and when he woke up it was time for lunch. I made a simple tuna salad filling and wrapped it in crunchy Romaine lettuce!
This afternoon, I brought my little one to the local pool. We’re practicing simple things like floating and reaching as he’s getting more comfortable being in the water. It’s such a refreshing experience for me, seeing things through his eyes.
We picked up some things for dinner before coming home and taking a nice long walk. I felt like I needed to stretch my legs a bit. Life in upstate New York can be more sedentary if you do a lot of driving. I try to do things like taking the stairs, parking extra far from entrances, squating to pick up the baby’s toys, and choosing to not sit down as much during my day to make sure I’m active.
When we got back I started the oven up to bake some chicken breast for tonight’s dinner. We had some summer squash and zucchini, as well. It was a delicious and yet, simple dinner.
