Today, after P’s swimming lesson (which included his lips turning blue from the cold water and me trying to not panic every time he coughed thinking he would drown!) we went to the natural food store. My plan for tomorrow’s naptime is to make Coconut yogurt from scratch. Really? You might say…is that possible? Why, yes. Apparently it is. We shall see if it turns out to be edible (not so much based on the recipe but more my own skills with chemistry, etc.).
1 can Full Fat Coconut Milk
2 cans Full Fat Coconut Milk, with solid coconut cream and water separated*
3 tbsp Inner-Eco Probiotic Kefir, or 3 emptied capsules of Probiotics (100 billion strength)
Reasons for making this effort:
- Lactose free
- Paleo friendly
- FODMAP friendly
- Celiac friendly
- hopefully gut-healing (fingers crossed, pleading eyes)
