Sunny Saturday!

Finally, a sunny day! The weather was gorgeous today! I did get a little weeding in after the last few days’ inches worth of rain.  I was aching to get outdoors and soak up some vitamin D. Thank goodness for good weather.  I definitely used sun protection.  I’m using a couple of products now that are gluten free: Neutrogena’s Dry-Touch SPF 85 and also Kiss my Face sun spray lotion SPF 30.  I avoid gluten ANY WAY possible!

Today’s breakfast was a repeat of yesterday with quinoa, tomatoes and eggs and decaf coffee with a 1/4 teaspoon of coconut oil.

I tried mango kefir for a mid-morning snack and made tuna salad for lunch. 006

Today’s workout was an incline treadmill walk.  I like walking on the treadmill when my little one is napping so I can be productive and get my reading in while also getting a good workout!
For dinner I made honey mustard glazed chicken with sauteed zucchini.014 015

Honey Mustard Chicken Recipe:

Ingredients

  • Chicken Breast filets
  • Chickpea flour
  • salt
  • pepper
  • honey-mustard sauce

Instructions

Take filet of chicken breast and season to taste before covering in chickpea flour. Put in buttered skillet over medium heat.  Turn and cook to a golden brown. Cover with honey- mustard sauce and serve.
